Zucchini Brownies
This recipe came from an old cookbook from central Utah. Part of the reason we look forward to Summer and family get-togethers is so we can have these brownies!!
Ingredients:
(1/2 Cup) Butter or Margarine
(1/2 Cup) Vegetable Oil
(1 3/4 Cup) Sugar
(2 Large) Eggs
(1 teaspoon) Vanilla
(2 1/2 Cups) Flour
(4 Tablespoons) Cocoa Powder
(1 1/2 teaspoons) Salt
(1 teaspoon) Baking Soda
(1/2 Cup) Buttermil
(2 Cups) Grated Zucchini
(1/2 to 3/4 Cup) Brown Sugar
(1 Cup) Chocolate Chips
(1 Cup) Chopped Nuts (Optional)
Directions:
Cream butter, oil and sugar. Add eggs and vanilla stir together well. Combine Dry Ingredients. Add dry ingredients to wet ingredients stir a little then add buttermilk and zucchini. Stir til all ingredients are mixed well together. You can use an electric mixer for these brownies.
Pour in greased 9 x 13 pan (or for thinner brownies a cookies sheet.)
Sprinkle on topping ingredients evenly over batter.
Bake for 30 minutes at 350. Done when toothpick inserted come out clean. Sometimes they take a little longer, check often as not to over bake.
No frosting needed!
These are cake like brownies.
