Fresh Salsa

This is such a simple recipe and so delicious!

Ingredients:


  • (6 Large) Tomatoes

  • (1/4 medium) Onion

  • (1) Chile Pepper

  • (1 Bunch) Cilantro

  • (1 Clove - minced) Garlic

  • (1 Pinch) Mexican Oregano

  • (to taste) Salt

  • (to taste) Pepper

Directions:

Dice Tomatoes (diced fine) about 6 tomatoes (just depends on the crowd so you can scale accordingly)
Dice super fine the onion, about ¼ of a medium onion. (I don’t love onion so, I don’t like it to overpower the other flavors but, you can adjust for your own taste)
Dice Chile pepper finely, 1 Chile.  (Some Chiles are hot some aren’t). We like it spicy, so we use Serrano peppers. Jalapeños from the store are not very spicy. 
Cilantro, 1 bunch.  Cut top off usually above where it is tied together.  Chop finely.
1 clove of garlic finely minced or ½ teaspoon powder. 
Mexican oregano…you can buy this in the Mexican spice section.  It’s in a bag and it’s the whole leaf oregano.  I just pinch a bunch and rub it between my fingers as I add it.  This makes a big difference in the salsa!
Salt and pepper to taste

Mix all together
Bam…. Delicious salsa!

Tips:
If eating with food, you can make it spicier, if eating with chips then make it milder.
If using garden fresh tomatoes (or any juicy tomato), I put a colander inside a mixing bowl and make the salsa in that.  It helps so that you don’t have so much liquid in the salsa.  I love fresh garden tomatoes and this trick made my life better!
